Recipe: Simple bok choy joy

Looking for a simple vegetarian option for dinner tonight? Try this simple four ingredient recipe, that comes from a simple tweet from @zen_habits:

Saute onion, garlic, bok choy in olive oil, a couple minutes; add roasted cashews, a little salt. You’re welcome.

Ended up eating it twice last week. Once as a meal all by itself and the second time as a “side” to a more complete meal.

I’ve never cooked bok choy and actually had to do a quick Wikipedia search while in the grocery store to know what to look for.

Ingredients:

1/2 head of bok choy
1/2 onion diced
2 cloves of garlic
olive oil
handful of cashews
salt for seasoning

Cover the bottom of your skillet/pan with a coating of olive oil (just enough to coat the bottom of the skillet — not enough to fry anything in).

Chop the onion and garlic and toss both into the skillet. Cook both for three to four minutes or until the onions become soft.

Cut the bok choy leaves into smaller sections and add it to the skillet.

Continue cooking the vegetables for two to three minutes or until the bok choy is just about cooked to your preference. Toss the vegetables occasionally.

Toss the handful of peanuts in the skillet and cook for another minute or two for the peanuts are done cooking.

Sprinkle salt over everything, remove from heat, plate and enjoy.

I thought the dish was amazing — and plenty filling as well. Would love to know what you think after you fix it.
